Cake maker Serena Whitefield from Pearl and Groves explains how her love of making healthy flourless cakes – including her whisky and ginger cake – has grown into a flourishing business, on James Martin: Home Comforts.

Serena says: “The idea behind Pearl and Groove is to create the most delicious cakes available in London. As well as this, there are some key rules, that have already been mentioned in the ‘taste it’ page but Pearl and Groove has a passion for health and although you may not believe us, all of these cakes are a great deal healthier than your regular sponge cake.”

2. MINIMAL INGREDIENTS (USUALLY NO MORE THAN 5)
3. NO WHITE FLOUR ALLOWED
4. EACH INGREDIENT HAS A PURPOSE AND STORY TO TELL TO
5. DELICIOUS, YUMMY, MORE-ISH AND VIRTUALLY GUILT FREE.
