Historian Ivan Day goes back in time to cook an historic dish in his Cumbrian home, bubble and squeak, on today’s Cheap and Cheerful Meals episode of James Martin: Home Comforts.
Ivan says: “Cheap and cheerful food is an area of cookery that the British really excel at, and if there is one dish that comes to mind than any other, it is bubble and squeak.”
Bubble and squeak is a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner. The main ingredients are potato and cabbage, but carrots, peas, Brussels sprouts, or any other leftover vegetables can be added.
Ivan makes his bubble and squeak by adding sliced roast beef.
