Dark chocolate brownies with sweet potatoes, pecan nuts and bourbon laced raisins recipe on Hairy Bikers: Route 66

Si and Dave served up delicious dark chocolate brownies with sweet potatoes, pecan nuts and bourbon laced raisins on the Hairy Bikers: Route 66.

The ingredients are: 1–2 sweet potatoes (makes 150g sweet potato mash), 1 tsp vanilla extract, 200g dark chocolate, minimum 70% cocoa solids, 200g butter, 200g caster sugar, 3 large free-range eggs, 60g plain flour, 60g cocoa powder, ½ tsp baking powder, ½ tsp sea salt, 75g pecans, roughly chopped, 100g chocolate chips or dark chocolate, roughly chopped, 50g dark chocolate, melted, to decorate and 50g white chocolate, melted, to decorate.

For the caramelised sweet potato: 1 sweet potato, peeled and chopped into 2cm, 1 tbsp butter, 1 tbsp maple syrup and salt.

For the soaked raisins: 100g raisins and 100ml bourbon whisky.
