Si and Dave served up a delicious cinnamon and walnut baklava with orange and cardamom cream on the Hairy Bikers: Route 66.

The ingredients for the filling: 500g walnuts, 1 tsp ground cinnamon, 1 orange, zest only, 50g butter, melted and salt.

For the pastry: 200ml butter, melted and 24 sheets ready-made filo pastry.

For the syrup: 250g granulated sugar, 100g honey and few pieces orange peel, thinly sliced.

For the orange and cardamom cream: 400ml whipping or double cream, ½ tsp very finely chopped orange zest, 1 tbsp icing sugar and ½ tsp cardamom powder.
