James Martin serves up baked potatoes with bacon, Taleggio cheese and leek with white wine sauce on James Martin: Home comforts.

Taleggio has been around since Roman times and is a semi-soft, smear-ripened Italian cheese that is named after Val Taleggio ( An alpine valley in Italy). The cheese has a thin crust and a strong aroma, but its flavour is comparatively mild with an unusual fruity tang.

James says: “Taleggio melts wonderfully and makes a delicious topping for crisp potato skins. Serve them as an indulgent side dish at barbecues or as an informal starter.”
