Peach melba with sugar roasted doughnuts and vanilla ice cream by James Martin

James Martin makes peach melba with sugar roasted doughnuts and vanilla ice cream as part of his TV themed dinners.

James says: “Fresh homemade doughnuts are impossible to resist. Try them with ice cream and this hot, delicious sweet fruit sauce.”

To make his quick peach melba sauce James used: tin peaches, sugar, fresh raspberries, brandy, orange, flaked almonds and pistachios nuts.

To prepare the sauce, he heats the sugar in a pan until it became caramelised.

He then adds a splash of brandy and brought it to the flame. The master chef then adds the juice of an orange, tin peaches, a handful of flacked almonds and a handful of pistachio nuts.

Finally, he adds the fresh raspberries and after a minute he turned of the heat and let the sauce rest.

James serves the sauce with his doughnuts and vanilla ice cream.
