Ruby Bhogal from The Great British Bake Off served up a delicious summer fruit cheesecake with mascarpone cheese, vanilla bean past and Pimm’s on This Morning.
The ingredients for the base: 185g digestive biscuits (blitzed to a fine crumb), Zest of 2 large oranges and 90g unsalted butter (melted).
For the filling: 600g mascarpone cheese, 300ml double cream, 100g golden icing Sugar (sifted), 1 1/2tsp vanilla bean paste, 200ml Pimms, Small handful of finely chopped mint, 75ml boiling water and 6 gelatine leaves.
For the jelly toping: 400g strawberries (thinly sliced & soaked in pimms), Zest of 2 lemons, 50g sugar, 200ml water and ¾ tsp agar agar powder.
