Ruby Bhogal meringue nests for Easter recipe on This Morning

Ruby Bhogal form The Great British Bake Off served up delicious lemon meringue nests with homemade lemon curd, mixed berries and mint Chantilly cream for Easter on This Morning.

The ingredients for the meringue: 4 large egg whites and 200g caster sugar.

For the lemon curd: 5 lemons, zest and juice, 50g of cornflour, 80ml of water, 200g of sugar, ½ tsp vanilla bean paste, 6 egg yolks and 150g of butter, cubed.

For the mint Chantilly: 200ml double cream, ½ tsp vanilla bean paste, 1 tbsp caster sugar and handful chopped mint (to taste).

To finish: Mixed summer berries and Mint leaves.
