Stephen Terry chicken ragu with purple sprout and broccoli recipe on James Martin’s Saturday Morning

Stephen Terry served up tasty chicken ragu with purple sprout and broccoli and a chilli sauce on James Martin’s Saturday Morning.

The ingredients for the ragu: 50ml olive oil, 1 red onion, finely diced, 1 carrot, finely diced, 1 celery stick, finely diced, 1 clove garlic, chopped, 300ml chicken stock, 400g minced chicken thighs, 1 small packet of flat leaf parsley, chopped and 100ml double cream.

For the polenta: 200g ready-made, hard polenta.

For the broccoli: 300g purple sprouting broccoli, 100ml olive oil, 2 anchovies, 1 pinch chilli flakes and 1 clove garlic, sliced.
