Paul Ainsworth served up delicious warm dark chocolate cakes with sweet clementine cheese on The Best Christmas Food Ever.
The ingredients for the chocolate cake: 3 free-range egg yolks, 3 free-range eggs, 200g sugar, 150g chocolate (70% cocoa solids), 150g unsalted butter, plus extra for greasing and 75g French T45 flour or Italian 00 flour.
For the clementine sweet cheese: 240g whipping cream, 125g crème fraîche, 225g cream cheese, 125g caster sugar, 1 vanilla pod, seeds only, 4 clementines, finely grated zest only and 2 tsp orange liqueur, such as Grand Marnier.
