Phil Vickery served up Rochelle’s favourite lamb stew with mint dumplings and mash potatoes on This Morning.
The ingredients for the stew are: 2-3 tbsp olive oil, 750g boneless shoulder of lamb (leave fat on), cut into 4cm cubes, 3-4 tbsp flour, 1 heaped tbsp tomato puree, 2 small onions, peeled and roughly chopped, 2 medium carrots, peeled and roughly chopped, 2 sticks celery, roughly chopped, 2 large potatoes, cut into 2cm cubes, about 500ml boiling water, 1 lamb stock cube and ½ tsp ground pepper.
For the dumplings: 225g self raising flour, 115g beef or vegetable suet, 2 pinches salt, 2 tbsp chopped fresh mint, 2 tbsp mint sauce, a little cold water, 1 medium egg and Mashed potatoes and peas, to serve.
