Phil Vickery Mediterranean frittata with peas and fresh mint recipe on This Morning

Phil Vickery served up a tasty Mediterranean frittata with peas and fresh mint on This Morning.

Phil served the frittata with a red pepper fondant made with the following ingredients:

Vegetable stock, garlic, onions, a 350g jar of red peppers, 4 sheets of gelatin, 150g natural yoghurt, fresh basil, sugar, salt and pepper.

The ingredients for the frittata: 2 tbsp olive oil, 2 onions, peeled and very finely chopped, 2 cloves garlic, finely chopped, 1 large courgette, chopped into1cm pieces, 200g defrosted petit pois peas, 200g cooked potatoes, cut into 2cm cubes, skin on, 150g crumbled feta cheese, 2 tbsp fresh mint chopped finely, 6 medium eggs, Salt and pepper.
