Simon Rimmer served up a delicious chocolate mousse cake traybake on Sunday Brunch.
The ingredients for the base: 200g cream crackers, crushed, 120g melted butter, 30g sugar and pinch salt.
For the topping: 350g chocolate, 600ml cream, 1 tbsp strong coffee, 1 tsp vanilla paste, 100s and 1000s to decorate.
