Nadiya Hussain served up a tasty African inspired jollof quorn pilau with salted cucumber dish on Nadiya’s Family Favourites.
The ingredients for the jollof spice mix: 30g ground ginger, 30g garlic powder, 45g chilli flakes, 20g dried thyme, 20g ground cinnamon, 15g ground nutmeg, 20g dried coriander, 1 tbsp salt and 1 tbsp ground black pepper.
For the pilau: 500g basmati rice, 5 tbsp olive oil, 1 onion, diced, 2 tsp salt, 300g Quorn pieces and 4 tbsp jollof spice mix (see above).
For the salted cucumber: 1 large cucumber, cut in half lengthways and thinly sliced on an angle, 1 red onion, thinly sliced and 20g rock salt.
