Phil Vickery summer pudding with brioche recipe on This Morning

Phil Vickery served up a delicious summer pudding with berries, lemons and brioche bread on This Morning.

The ingredients are: 250g fresh red, black or white currants or a mixture (frozen is fine), 150g strawberries, halved, 500g raspberries, 150g caster sugar, Juice and zest of 1 large lemon, 2 small leaves gelatine, soaked in cold water and 12 slices of brioche or thin white bread crusts removed.

To serve: 300mls double cream, 2 tsp vanilla extract, A little sugar to taste and Use any leftover fruit to decorate.
