James Martin Thai green curry with chicken, shrimps and pea aubergines recipe

James Martin served up a tasty Thai green curry with chicken, prawns, pea aubergines, galangal, spinach and sticky rice on James Martin’s Saturday Morning

The ingredients for the curry paste are: 1 x 5 cm piece of galangal, peeled and chopped, 3 garlic cloves, peeled and chopped, 3 green chillies chopped, 4 lemongrass stalks, chopped, 50ml vegetable oil, 6 kaffir lime leaves, 1 tsp caster sugar and 1 tbsp fish sauce.

600g chicken breasts, cut into 5cm chunks, 200g peeled prawns, 400ml coconut milk, 200g sugar snap peas, chopped and 100g pea aubergines and 200g spinach.

To serve: Chopped coriander and Cooked sticky rice.
