James Martin Chicken en croute recipe

James Martin served up a tasty Chicken en croute on James Martin’s Saturday Morning.

The ingredients: 2 x skinless chicken breasts, French trimmed, skin removed, 1 small bunch tarragon, 200g mushrooms, diced, 15g butter, Salt and pepper, 200g ready-made puff pastry.

For the sauce: 15g butter, 100g mushrooms, sliced, 100ml chicken stock, 50ml white wine, 100ml double cream, 6-8 sprigs tarragon and 1 egg yolk for egg wash.
