James Martin wild garlic and barley risotto with fillet steak recipe

James Martin served up a tasty wild garlic and barley risotto with fillet steak and greens on James Martin’s Saturday Morning.

The ingredients for the risotto are: 1 bulb garlic, 2 bunches of wild garlic, 1 large bunch of flat leaf parsley, 15ml olive oil, Salt and pepper, 50g butter, 100g pearl barley, cooked as per pack instructions, 600ml chicken stock, 50ml double cream and 25g parmesan cheese.

For the steaks: 25ml olive oil, 600g fillet steak, Salt and pepper and 25g butter.

For the kohlrabi: 100g caster sugar, 100ml white wine vinegar, 1 kohlrabi peeled and sliced finely.
