Simon Rimmer served up delicious caramel whoopie pies on Sunday Brunch.
The ingredients are: 1 egg, 150g sugar, 125g yoghurt, 25ml milk, 3g vanilla paste, 75g butter, melted, 275g plain flour, 3g bicarb, 2g baking powder and ½ tbsp ground cinnamon.
For the filling: 175g butter, 280g icing sugar, sifted, 1 jar marshmallow fluff and 30g dulche de leche.
