Simon Rimmer serves up a delicious spiced bundt cake with salted caramel icing on Sunday Brunch.
The ingredients are: 250g butter, 100g shredded vegetable shortening, 325g caster sugar, 5 eggs, 400g flour, half tsp each of cinnamon, cloves, nutmeg, allspice, cloves, salt, baking powder, 290ml milk and 5ml vanilla.
For the Icing: 125g butter, 225g brown sugar, 100ml cream, 210g icing sugar and 5ml vanilla.
To garnish: red fruits and cream.
