Simon Rimmer serves up courgette pancakes with tomato and avocado salsa on Sunday Brunch.
The ingredients for the pancakes: 2 finely grated courgettes, 1 tsp chilli flakes, 1 tsp smoked paprika, 2 chopped spring onions, 25g chopped mint, approx. 200g gram flour and approx. 50ml water.
For the salsa: 200g chopped cherry toms, 1 diced avocado, 1 chopped chilli, half diced cucumber, juice and zest 2 limes and handful chopped coriander.
