Stephen Terry braised leeks with ham hock, croquettes and potato vinaigrette recipe

Stephen Terry served up tasty ham hock with braised leeks, cheddar croquettes and potato vinaigrette on James martin’s Saturday Morning.

the ingredients: 20 baby leeks or 3 medium sized leeks, 300g cooked ham hock (approximately 1 whole ham hock or a piece of cooked gammon), 400g coarsely grated strong cheddar, 200g mashed potato, Panko (Japanese) breadcrumbs, 1 large Maris Piper Potato, peeled and cut into small dice, then the starch washed off, 75g approx grain mustard, 250ml olive oil, 20ml white wine vinegar, 1 head of Radicchio lettuce and Small bunch of chives, finely chopped.
