James Martin stuffed roasted leg of lamb with roast potatoes, stuffing and mint sauce recipe

James Martin served up tasty stuffed roasted leg of lamb with almonds, homemade mint sauce, carrots, cabbage and weeping roast potatoes on James Martin’s Saturday Morning.

The ingredients are: 1 boned leg of lamb, 2 lemons, juice and zest, 1 small bunch rosemary, chopped, 100g breadcrumbs, 100g almonds, chopped and 2 eggs.

For the potatoes: 1 kilo Maris Piper potatoes, peeled and cut, 300g goose fat.

For the carrots: 500g large carrots, 50g butter, 25g caster sugar and 4 star anise.

For the Spring cabbage: 400g cabbage, shredded and 50g butter.

For the mint sauce: 1 large bunch mint, chopped, 100ml malt vinegar, 50g caster sugar and Pinch of salt.
