Josh Hartnett and Jamie Oliver served up a tasty pork ramen with apple soffritto broth on Jamie and Jimmy’s Friday Night Feast.
The ingredients are: marinated eggs and ramen noodles.
For the pork belly chashu: 750 g higher-welfare pork belly , skin removed, 10 g coarse kosher salt, 20 g soft light brown sugar and 30 ml light soy sauce.
For the apple soffritto: 1 onion, 4 cloves of garlic, 3 cm piece of ginger, 1 tart green apple and 1 tablespoon canola , or rapeseed oil.
For the shoyu tare: 75 ml sake, 75 ml mirin and 100 ml soy sauce , ideally Yamasa.
For the broth: 1 litre good organic chicken stock and 1 litre dashi.
To garnish: 3 spring onions and 1 fresh red chilli.
