The Bikers brandade de morue (whipped salt cod with a potato dip ) recipe

The Bikers served up a tasty brandade de morue ( whipped salt cod with a potato dip ) on Hairy Bikers’ Mediterranean Adventure.

The ingredients are: 500g piece salt cod, 500ml milk, 2 bay leaves, 2 garlic cloves, thinly sliced, few peppercorns, ½ tsp fennel seeds, 1 piece pared lemon zest, 400g potatoes, peeled (unpeeled weight), 100m single cream and 75ml olive oil.

To serve: grating nutmeg, 1-2 tbsp olive oil, few slices truffle and thin slices French bread, toasted.
