The Bikers strozzapreti (cheese quenelles in tomato sauce) recipe

The Bikers served up Corsican strozzapreti(cheese quenelles in a rich tomato sauce) on Hairy Bikers’ Mediterranean Adventure.

The ingredients are: 300g ricotta, 500g Swiss chard, pinch salt, 50g very fine breadcrumbs, 1 free-range egg, lightly beaten, 1 tbsp finely chopped basil, 1 tbsp finely chopped mint, 50g pecorino cheese, fine semolina, or 00 flour, for dusting, 50g gruyère cheese, grated and 50g pecorino or brocciu cheese, grated.

For the tomato sauce: 3 red peppers, cut in half and deseeded, 2 tbsp olive oil, 1 onion, finely chopped, 2 garlic cloves, finely chopped, 1 bay leaf, 1 sprig thyme, 1 sprig rosemary, 150ml red wine and 400g tin tomatoes or 8 medium tomatoes, peeled.
