Gino’s Beef Wellington with Amarena cherry gravy recipe

Gino D’Acampo served up a tasty beef Wellington with Amarena cherry gravy on Gino’s Italian Coastal Escape.

The ingredients are: 800g piece of middle-cut beef fillet, trimmed, 5 tablespoons olive oil, 10 slices Parma ham, 4 tablespoons shop-bought red, sun-dried tomato pesto, 500g puff pastry, 4 egg yolks, Salt and freshly ground black pepper.

For the gravy: olive oil, red onions, salt, rosemary, runny honey, red wine, balsamic vinegar, chicken stock and Amarena cherries or cherry jam.
