The master baker made a wonderful Pièce Montée that looked like a work of art rather than a dessert.
Piece montée (or croquembouche) is a traditional French cake often served at weddings. Raymond Blanc’s dramatic version is made even more extra special by dipping the caramel buns in nibbled sugar.
