James Martin lamb shoulder with broad beans and peas recipe

James Martin served up slow roasted lamb shoulder with broad bean, pea, feta and mint salad on Saturday Morning With James Martin.

The ingredients are: 2 onions, peeled and quartered, 1.5 kilo shoulder of lamb, 750ml water, 300g fresh broad beans, 300g fresh peas, 200g feta and 3 tablespoons mint, chopped.

For the dressing: 15ml honey, 15ml white wine vinegar, 50ml olive oil, 1 small shallot, peeled and diced, ½ clove garlic, crushed, ½ lemon, Salt and pepper.
