James Martin served up a summer berry fruit choux dessert on Saturday Morning With James Martin.
The ingredients for the choux are: 500ml cold water, 4 tsp caster sugar, 230g butter, diced, 400g strong plain flour, 1 tsp fine salt and 8 medium eggs, beaten.
For the filling: 600ml double cream, 1 tsp vanilla bean paste, 600g fresh mixed berries, (strawberries, raspberries, redcurrants), 200ml raspberry sauce and 1 tsp Icing sugar.
For the raspberry sauce: 250g fresh raspberries and 2 tbsp icing sugar.
