Nadiya Hussain herb chicken and potato salad recipe

Nadiya Hussain served up herb chicken and potato salad dish on Nadiya’s British Food Adventure.

The ingredients for the marinated chicken: 2 skinless, boneless chicken breasts, 75g plain skyr or Greek yoghurt, 1 tbsp olive oil, plus extra for cooking, handful flat-leaf parsley, chopped, 1 tsp ground ginger, ¼ lemon, juice only, salt and freshly ground black pepper.

For the salad: 250g new potatoes, 1 courgette, grated and 1 large carrot, cut into ribbons using a vegetable peeler.

For the dressing: 50g plain skyr or Greek yoghurt, 25ml olive oil, 1 tsp Dijon mustard, 1–1½ tsp cider vinegar, ½–1 tsp runny honey and 4 tbsp finely chopped fresh chives, plus extra for garnish.
