Simon Rimmer served up marinated lamb leg steak with salsa verde and lemon flavoured potatoes on Eat the Week with Iceland.
The ingredients are: 4 lamb leg steaks, 200ml olive oil, 20g rosemary (finely chopped), 2 cloves of garlic (sliced) andSalt and pepper.
For the Salsa Verde: 50g flat leaf parsley, 15g mint, 30g tarragon, 15g capers, 15g salted anchovies, 15g Dijon mustard, Approx. 175ml extra virgin olive oil, 400g cooked new potatoes (cut into thick slices), 150g butter, 1 lemon (zest and juice), Salt and pepper.
