John Whaite served up lamb chops lollipops with salad on today’s episode of Lorraine.
The ingredients or the Salad are: 100g fine asparagus, chopped and blanched, 50g bulgur wheat, 50g parsley, roughly chopped, 50g basil, roughly chopped, 100g vine tomatoes, diced, 50g sundried tomatoes, roughly chopped, 2 spring onions, finely sliced, Juice of 1 lemon and 50ml extra virgin olive oil.
For the Lamb: 4 lamb cutlets, trimmed with thick fat removed, 75g plain flour, 1 large egg, beaten, 125g fresh breadcrumbs, 30g Parmesan cheese, finely grated, Sunflower oil, for frying, Salt and pepper.
