Chef Brian Turner makes a Turkey Holstein as part of his turkey challenge by James Martin on Christmas Kitchen with James Martin.
To make his turkey dish, Brian trims the turkey crown and sliced thinly. He then flattens each piece using a rolling pin.
In a shallow bowl, he mixed flour, paprika, mustard powder, salt and pepper together. In a separate bowl, he beats two eggs.
He passed the turkey slices through the flour mixture, dredge in beaten egg and coated in breadcrumbs, and shake off any excess at each stage.
Brian heats a little olive oil in a large frying pan and fries each slice of the turkey presentation-side down first until golden-brown. He then turns over and fried the other side until cooked through.
He then removed the turkey slices from the pan and drained on kitchen paper, before frying one egg for each slice of the turkey in butter.
Brian the puts the turkey on serving plates, with the fried eggs on top with anchovies around the plate.
Finally to make his sauce, he discard any excess fat from the frying pan and added cherry vinegar which he simmers for a few minutes before adding butter, anchovies, capers and parsley. He allows the source to cook for a couple of minutes before adding a splash of lemon juice.
