Simon Rimmer served up a lemon coconut poppy seed loaf on today’s episode of Sunday Brunch.
The ingredients are: 200g sugar, 125g butter, 2 eggs, zest and juice 1 lemon, 200g plain flour, 5g baking powder, 125ml milk, 50g toasted desiccated coconut and 15g poppy seeds.
For the drizzle: 150g icing sugar and approx. 15ml lemon juice.
