Simon Rimmer served up spiced leg of lamb with crispy sprouts and kale on Eat the Week with Iceland.
The ingredients include: 1 x 2kg leg of lamb, kale and sprouts.
For the spice Rub: 15g cumin seeds, 15g dried oregano, 60g brown sugar, 10g sea salt, 70ml sherry vinegar, 70ml olive oil, Approx. 200ml water, 150g kale (stalks removed and cut into bite size pieces), 450g Brussels sprouts (blanched and halved), 125ml buttermilk, 125g flour, 15g garlic powder, 15g paprika, 15g celery salt and 10g cracked black pepper.
