Simon Rimmer served up a courgette and chocolate cake with buttercream on Eat the Week with Iceland.
The ingredients are: 75g cocoa powder, 175g self-raising flour, 225g caster sugar, 225g courgettes (grated), 3 eggs and 200ml corn oil.
The buttercream: 100g butter, 200g cream cheese, 400g icing sugar and 1 vanilla pod (seeds scraped).
