Phil Vickery served up sweet and sour stir fry pork with Rhubarb compote on This Morning.
The ingredients are: 1 red pepper, de seeded and cut into strips, 1 yellow pepper, de seeded and cut into strips, 1 medium onion, very finely sliced, half a medium egg white, 1 tbsp cornflour, 500g pork loin fillet, no fat or silver sinew, cut into 8-10 slices across the fillet about 1cm thick, A pinch of salt, 4 tbsp vegetable oil, 2-3 tbsp rhubarb compote, 2 tsp any vinegar, salt and pepper.
For the Rhubarb compote: 1 tbsp oil, 50g finely chopped fresh ginger, 50g minced lemon grass (jarred in oil), 500g rhubarb, chopped in 1cm pieces, 100ml water, 100g caster sugar, roughly, 100mls water, 2 tsp cornflour or arrowroot and 2 tbsp cold water.
