Phil Vickery asparagus spring tart recipe on This Morning

Phil Vickery served up a asparagus spring tart with hollandaise sauce, watercress, Jersey Royal and salad on This Morning.

The ingredients are: 2 -3 tbsp any oil, 350g asparagus, 1 x 320g sheet ready rolled butter puff pastry, 1 x 200g jar ‘ready made’ hollandaise sauce, 400g Jersey Royal or any small new potato, cooked then sliced lengthways, 6 salad onions, finely sliced, 50g watercress, roughly chopped, 50g rocket, roughly chopped, salt and pepper.

For the salad with plum tomatoes, red onion and mozzarella: 2 Little Gem lettuce, 8 ripe plum tomatoes, 50g lambs lettuce, 100g cooked cold peas, 1 small red onion peeled and very finely sliced, 1 tbsp Dijon mustard, 2 tbsp sherry vinegar, 6 tbsp extra virgin olive oil, salt and ground black pepper, 150g Buffalo Mozzarella cheese, broken into pieces, 4 tbsp roughly chopped basil and 8 heads garlic flowers.

For the dressing: 5 large red or yellow peppers, salt and ground black pepper, castor sugar, 125mls of good quality extra virgin olive oil, touch of cold water and lemon juice.
