Rosemary Shrager Middle Eastern Mezze with lamb shish kebabs, hummus, tzatziki and flat breads on Chopping Block.
The ingredients for the kebab: 800g minced lamb shoulder, 2 garlic cloves, 2 tsp ground cumin, 1 deseeded chilli and 1 tbsp fresh mint.
For the flat breads: 200ml plane flour, 200ml water, 1 tbsp olive oil, pinch of salt and soda.
For the tzatziki: slated cucumbers, dried mint, parsley, garlic, lemon, olive oil, yoghurt, salt and pepper for seasoning.
