Nigel Barden served up tipsy cider cake on BBC Radio 2 Drivetime with Simon Mayo.
Nigel says: “For a alcohol free version, use apple juice instead of cider but make sure it is a good quality apple juice.”
The ingredients are: 350g self-raising flour, pinch of salt, 175g demerara sugar, 175g unsalted butter, 275g mixed dried fruit, grated zest of 1 orange, 1 large egg, beaten, 150ml dry or sweet cider and 2 tsbp good quality marmalade (any kind you like, with rind or without).
