Mary Berry served up a chocolate reflection cake with mirror icing, apricot jam and Scots whisky cream on Mary Berry Everyday.
Mary says: “This is a dazzling cake that’s perfect for any celebration. The cake itself is easy to make, so you can put your efforts into the icing glaze.”
The ingredients are: 50g cocoa powder, 6 tbsp boiling water, 3 large free-range eggs, 50ml full-fat milk, 175g self-raising flour, 1 tsp baking powder, 100g baking spread, plus extra for greasing and 275g caster sugar.
For the icing: 7 sheets (11g) leaf gelatine, 225g caster sugar, 75g cocoa powder, 5 tbsp double cream, 50g dark chocolate, chopped into chunks and 2 tbsp apricot jam, sieved.
To decorate: 300ml double cream, whipped until stiff peaks form and 10 strawberries.
