The ingredients for the braising stock include: white onions, miso paste, ginger, red chillies, garlic, five spice, honey, soy sauce, rice wine and water.
For the salad: green papaya peeled, sliced into fine strips, cucumber, deseeded and sliced into thin strips, spring onions, finely sliced and pomegranate seeds.
For the dressing: 1 red chilli, 2 garlic cloves, juice of 2 limes, 2 tbsp Thai fish sauce and 2 tsp palm or soft brown sugar.
