Mary Berry served up herbed quinoa and bulgur wheat salad with lemon and pomegranate on Mary Berry Everyday.
Mary says: “This zesty salad is packed full of flavour and goodness, perfect for popping in your lunchbox.”
The ingredients are: 150g bulgur wheat, 150g red quinoa, rinsed well and drained, 1 tbsp olive oil, for frying, 1 red onion, thinly sliced, 200g sun-blushed tomatoes in oil, drained and halved, 2 tbsp freshly chopped fresh mint leaves, 2 tbsp freshly chopped flatleaf parsley, 2 tbsp finely snipped chives, 1 tbsp torn fresh basil leaves, 100g feta cheese, broken into pieces and 50g pomegranate seeds, to garnish (optional).
For the dressing: 1 unwaxed lemon, finely grated zest and juice only, 2 tbsp pomegranate molasses, 1 tsp sugar and 2 tbsp olive oil.
