Nigel Barden served up coffee-brine pork chops with hot sweet potatoes on Radio 2 Drivetime with Simon mayo.
The ingredients are: 6 tbsp soft dark brown or molasses sugar, 30g sea-salt flakes, 1 litre freshly brewed hot coffee, 4 big pork chops, about 250-275g each, 4 sweet potatoes, Black pepper, 1½ tbsp rendered pork fat, lard or flavourless oil, 25g unsalted butter, leaves from 4 sprigs of thyme, 1 red and 1 green chilli, deseeded and finely sliced.
