Chicken Kiev is one of the nation’s favourite foods, but most of us tend to buy it in the form of a processed ready meal from the supermarket.
Nigel Slater has developed his own recipe that is easy to follow and will allow you to make a freshly made kiev that is much better for you and your family.
To make his kiev, Nigel starts by finely chopping some parsley and slicing some soft Italian Taleggio cheese.
He rolls the cheese slices in the chopped herb, then proceeded to cut the chicken breast to make a slit/pocket deep enough to hold a sliced cheese segment rolled in the herb. He then stuffed each chicken breast with a segment.
To make the coating, Nigel adds sliced garlic and bacon into a pan with butter and fried for a moment until the butter is melted. He then adds a hand full of breadcrumbs and continue to fry.
While the breadcrumbs mix is frying, Nigel coated the chicken with olive oil and seasoning.
He then removes the pan from the heat and spoon over the bread crumb mix on the chicken and pushed it down to form a coating.
The chicken is then placed in the Oven for about 180 degrees for 30 minutes.
