Spiced cream and blackberries Victoria sponge recipe on The Hairy Bikers Comfort Food

Si and Dave made the ultimate dessert with their spiced cream and blackberries sponge on The Hairy Bikers Comfort Food show.

The ingredients for the sponge: 225g butter, softened, 225g caster sugar, 4 free-range eggs, 225g self-raising flour, 2 tbsp lemon juice.

For the blackberries: 1 punnet blackberries, 1 tbsp caster sugar and 1 tbsp blackberry liqueur, such as crème de mure (optional).

For the spiced cream: 250ml double or whipping cream, 2 tbsp icing sugar, ½ tsp ground cardamom, ¼ tsp ground allspice, ¼ tsp ground cinnamon and ¼ tsp ground mace.

Si and Dave says: “You could use spelt flour instead of plain flour for a slightly nutty flavour, which works really well with blackberries. If you do, add 2 teaspoons of baking powder.”
