Jane Beedle’s guilt free muffin recipe on Lorraine

Jane Beedle served up delicious guilt free, sugar and dairy-free chocolate muffin on today’s episode of Lorraine.

The ingredients are: 100g dark chocolate, minimum 70% cocoa solids, 70g coconut oil, 110g ground almonds, 20g gluten free self-raising flour, 20g cornflour, 1 ½ tsp gluten free baking powder, 1 ½ tsp bicarbonate of soda, ¼ tsp xanthan gum, 60ml vegetable oil, 2 large eggs, beaten, 2 medium ripe bananas, mashed (they must be ripe), 1 tsp vanilla extract, 75g brazil nuts, chopped and 100g raisins.

For the topping: 100g dark chocolate, minimum 70% cocoa solids, 60g coconut oil, ½ tsp vanilla extract and brazil nuts, chopped.
