Mushroom soup with matured cheese and chorizo rolls recipe on The Hairy Bikers Comfort Food

Simon and Dave served up a tasty mushroom soup with tear and share matured cheese and chorizo rolls on The Hairy Bikers Comfort Food.

The ingredients are: 20g dried wild or porcini mushrooms, 10g butter, 2 shallots or 1 leek, finely chopped, 1 garlic clove, sliced, 500g fresh mushrooms, a mixture of Portobello, chestnut, button and wild mushrooms, in any combination you like, 700ml chicken or vegetable stock, 1 large sprig thyme, 25ml sherry or marsala or juice of ½ lemon, salt and freshly ground black pepper and 2 tbsp finely chopped fresh parsley, to serve.

For the rolls: 500g strong white flour, 7g instant yeast, 1 tsp salt, 1 tsp sugar or honey, 2 tbsp olive oil, 300ml tepid water, 50g chorizo, finely chopped, 100g hard cheese (such as cheddar or gouda), grated, 2 tbsp finely snipped chives (or finely chopped thyme, oregano, parsley), 1 free-range egg, beaten, for glazing.
