Simon Rimmer served up a delicious chocolate and ricotta pudding with mulled wine chocolate sauce on Sunday Brunch.
The ingredients are: 125g dark chocolate, melted, 125g ricotta, drained for 1 hour at least, 3 yolks, 4 egg whites, 50g sugar, 20g cold butter, garnish with red fruits and grated chocolate.
For the sauce: 250ml red wine, 150g sugar, 1 cinnamon stick, 3 cloves, 1 piece orange peel, 10g all spice, 3g grated nutmeg, 150g dark choc and 150ml cream.
